Ingredients
5 nectarines, sliced
2 ounces soft-ripened goat cheese (chevre)
1 tablespoon chopped fresh mint
2 tablespoons slivered almonds
6 cups arugula or other tender bitter greens
2 tablespoons fruity extra virgin olive oil, more to taste
½ lime, juiced, more to taste
1/4 teaspoon salt, more to taste
Freshly grated black pepper to taste
Method
- Arrange greens on a serving place, top with sliced fruit, crumbled cheese, and almonds.
- Drizzle with olive oil and season with salt and pepper.
- Serve with sliced bread. Enjoy!
