Nectarine salad with goat cheese, almonds & mint

This sweet and savory salad invites you to enjoy local stone fruit without the added sugar of baking or heating up the kitchen. Use whatever stonefruit looks best to you (plums or peaches), swap out feta for chevre if you like, and a different herb if you like.

5 nectarines, sliced
2 ounces soft-ripened goat cheese (chevre)
1 tablespoon chopped fresh mint
2 tablespoons slivered almonds
6 cups arugula or other tender bitter greens
2 tablespoons fruity extra virgin olive oil, more to taste
½ lime, juiced, more to taste
1/4 teaspoon salt, more to taste
Freshly grated black pepper to taste


  • Arrange greens on a serving place, top with sliced fruit, crumbled cheese, and almonds.
  • Drizzle with olive oil and season with salt and pepper.
  • Serve with sliced bread. Enjoy!
