Fresh lima beans (sometimes called butter beans) are such a treat, don't pass them up if you see them at market. We like ours with bacon and chicken stock but you can omit the bacon and use veggie stock instead. Pair with a simple salad and some crusty bread for an easy dinner.

2 strips bacon, diced
1 onion, diced
3 cloves garlic
4 cups fresh shelled lima or butter beans
2 cups chicken stock
Salt to taste
ground pepper to taste
Optional garnish: chopped parsley or chives
- In a medium sauce pan, cook the bacon over medium heat until the fat renders out and the bacon gets slightly crispy.
- Add the onion and cook until translucent, about five minutes. Add garlic, stir and cook for another minute or two.
- Add lima beans and stock and simmer over low heat partially covered, until the beans are tender about 30 minutes. Taste for salt and add more if you want and season with pepper.
- Serve hot with optional herb garnish.
